  • 2 pounds Ground Round
  • 1 Green Bell Pepper
  • 1 Red Bell pepper
  • 2 cups Chicken Stock
  • 1 bottle Guinness Beer
  • 2 Chopped Onions
  • 2 Dried Chipotle Chilis
  • 1 can Kidney Beans
  • 1 can Pinto Beans
  • 1 can 28 Oz. Chopped Tomato
  • 1 tablespoons Cumin, Chili Power, corriander, salt and pepper to taste

Directions

    Boil dried pepper in broth and set aside to soften and cool, then blend to a paste.

    Meanwhile, saute vegetables till soft.

    Saute Beef and add spices. Add veggies and reserved chili past with broth. Add Beer and cook at l east one hour

    Rinse and drain beans and add to the beef mixture. Season to taste with Salt and Pepper and heat through.

    Garnish with cheddar, sour cream and lime juice
