- 3 or 4 lb. yellow squash, washed, sliced, cooked until tender and mashed
- 1 onion, chopped
- 1 Tbsp. sugar
- salt and pepper to taste
- 1 egg
- 1/2 stick oleo
- 1/2 c. cracker crumbs
- 1/2 c. cracker crumbs
- 1/2 stick melted butter
Directions

1Add onion, sugar, salt, pepper, egg (add and beat quickly to avoid curdling), 1/2 stick oleo and 1/2 cup cracker crumbs to squash.

2Pour into a casserole dish and top with another 1/2 cup cracker crumbs and another 1/2 stick melted butter.

3Bake at 350° for 1 hour or microwave on Full power for 30 to 40 minutes.
