  • 1 1/2 lb. yellow squash
  • 1 c. cream of chicken soup
  • 8 oz. sour cream
  • 2 small onions, chopped
  • 2 stalks celery, chopped
  • 1 small carrot, grated
  • 1 1/2 sticks margarine
  • 1 (8 oz.) pkg. herb stuffing mix

    Cook squash; drain well and mash. Combine all ingredients except 1/2 stick of margarine and 1/2 package of stuffing mix. Place all ingredients mixture in 2 1/2-quart casserole dish. Melt the 1/2 stick margarine and toss with stuffing mix. Spread over top of casserole. Bake, uncovered, for 35 to 40 minutes at 350°.
