Squash Casserole

Ingredients

  • 4 cups cooked squash
  • 1 stick oleo
  • 1 1/2 cups grated Ritz crackers
  • 2 eggs
  • 1/2 cup sour cream
  • 1 tsp. baking powder
  • 1 tbsp. prepared mustard
  • 1 small onion, chopped
  • 1 cup or more grated cheese
  • salt and pepper to taste

Directions

    If squash is frozen, let thaw.

    Heat squash.

    Put in mixer with oleo, eggs, salt, and pepper and beat good until smooth texture.

    Add rest of ingredients.

    Grease casserole and pour in mixture.

    Put cracker crumbs mixed with 1/2 stick melted oleo on top.

    Bake 350° until lightly brown.
