- 4 cups cooked squash
- 1 stick oleo
- 1 1/2 cups grated Ritz crackers
- 2 eggs
- 1/2 cup sour cream
- 1 tsp. baking powder
- 1 tbsp. prepared mustard
- 1 small onion, chopped
- 1 cup or more grated cheese
- salt and pepper to taste
Directions

1If squash is frozen, let thaw.

2Heat squash.

3Put in mixer with oleo, eggs, salt, and pepper and beat good until smooth texture.

4Add rest of ingredients.

5Grease casserole and pour in mixture.

6Put cracker crumbs mixed with 1/2 stick melted oleo on top.

7Bake 350° until lightly brown.
