Squash Casserole

Ingredients

  • 8 medium squash
  • 1 can whole kernel corn, drained
  • 2 whole onions, chopped
  • 1 bell pepper, chopped
  • 1 can green chili peppers
  • 1/2 stick butter
  • 10 or 12 crackers, mashed with butter
  • 1 c. grated cheese
  • salt and pepper
  • 2 tsp. sugar

Directions

    Boil squash until tender.

    Saute onions and bell pepper in butter.

    Add all ingredients together, except cracker crumbs mashed in butter.

    Put in casserole dish.

    Cover with cheese, then sprinkle with crackers that have been mashed in butter.

    Bake at 350° for 30 minutes, then bake at 400° for 10 minutes.
