Ingredients

  • 1 1/2 lb. yellow squash, sliced, cooked until nearly done, then mashed
  • 2 medium carrots, shredded
  • 1/2 small jar pimiento, drained
  • 1 can cream of mushroom soup
  • 1 small carton sour cream
  • 1/2 small onion, chopped
  • 1 stick butter, melted
  • 1 pkg. Pepperidge Farm stuffing

Directions

    Mix first 6 ingredients. Add melted butter to stuffing mix and line bottom of 9 x 13 dish or pan with this mixture.

    Pour squash mixture over stuffing mixture. Bake at 350° for 30 minutes or until hot and bubbly. Freezes well.
