- 1 1/2 lb. yellow squash, sliced, cooked until nearly done, then mashed
- 2 medium carrots, shredded
- 1/2 small jar pimiento, drained
- 1 can cream of mushroom soup
- 1 small carton sour cream
- 1/2 small onion, chopped
- 1 stick butter, melted
- 1 pkg. Pepperidge Farm stuffing
Directions

1Mix first 6 ingredients. Add melted butter to stuffing mix and line bottom of 9 x 13 dish or pan with this mixture.

2Pour squash mixture over stuffing mixture. Bake at 350° for 30 minutes or until hot and bubbly. Freezes well.
