Squash Casserole

  • 2 c. cooked squash
  • 1/2 c. chopped onion
  • 8 tsp. diet margarine
  • 2 eggs, beaten
  • salt and pepper
  • 1/2 c. evaporated skim milk
  • 4 slices bread, crumbled
  • 6 oz. grated cheese

Directions

    Saute onion in margarine.

    Mix squash, 1/2 bread crumbs, salt and pepper.

    Add sugar, onion, margarine, eggs and milk.

    Bake at 350° for 30 minutes.

    Cover with remaining bread crumbs and cheese.

    Bake until cheese is bubbly.

    Makes 4 servings.

    Equals 1 serving vegetable, 1/2 bread, 1 fat serving, 1/4 milk, 2 protein, 1/2 egg and 1 1/2 ounces cheese.
