- 2 c. cooked squash
- 1/2 c. chopped onion
- 8 tsp. diet margarine
- 2 eggs, beaten
- salt and pepper
- 1/2 c. evaporated skim milk
- 4 slices bread, crumbled
- 6 oz. grated cheese
Directions

1Saute onion in margarine.

2Mix squash, 1/2 bread crumbs, salt and pepper.

3Add sugar, onion, margarine, eggs and milk.

4Bake at 350° for 30 minutes.

5Cover with remaining bread crumbs and cheese.

6Bake until cheese is bubbly.

7Makes 4 servings.

8Equals 1 serving vegetable, 1/2 bread, 1 fat serving, 1/4 milk, 2 protein, 1/2 egg and 1 1/2 ounces cheese.
