Squash Casserole

Ingredients

  • 3 c. cooked mashed squash
  • 8 or 10 crackers
  • 1/4 c. butter
  • 3 eggs
  • 1 small onion
  • 1 c. grated cheese
  • 1/2 c. milk
  • salt and pepper to taste

Directions

    Cook squash and onion together until very tender.

    Drain off water.

    Mash fine.

    Add salt and pepper, cheese, butter, egg yolks and crackers, that have been crumbled very fine.

    Beat egg whites very stiff and fold into mixture.

    Cook in greased casserole dish until brown.
