Squash Casserole

Ingredients

  • 2 c. cooked squash, approximately 5 medium summer squash
  • 3/4 stick margarine, melted
  • 2 eggs or 4 egg whites
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • 1 c. shredded cheddar cheese
  • 1 c. evaporated milk
  • 1/2 chopped onion
  • 2 c. Ritz cracker crumbs

Directions

    Cook squash whole.

    Drain and cut into quarters.

    Set aside. In casserole pan mix margarine, eggs, pepper, salt, cheese, evaporated milk and onion.

    Add cooked squash to mixture and mix together thoroughly.

    Mix in cracker crumbs and stir together.

    Top with sprinkles of cheese.

    Bake at 375° for 40 minutes or until light brown.
