- 2 c. cooked squash, approximately 5 medium summer squash
- 3/4 stick margarine, melted
- 2 eggs or 4 egg whites
- 1/2 tsp. pepper
- 1 tsp. salt
- 1 c. shredded cheddar cheese
- 1 c. evaporated milk
- 1/2 chopped onion
- 2 c. Ritz cracker crumbs
Directions

1Cook squash whole.

2Drain and cut into quarters.

3Set aside. In casserole pan mix margarine, eggs, pepper, salt, cheese, evaporated milk and onion.

4Add cooked squash to mixture and mix together thoroughly.

5Mix in cracker crumbs and stir together.

6Top with sprinkles of cheese.

7Bake at 375° for 40 minutes or until light brown.
