Squash Casserole

Ingredients

  • 2 lb. squash, cooked, drained and mashed
  • 1/2 c. onion
  • 1 sweet green pepper
  • 3 c. old fashioned cooked rice
  • 2 eggs, beat well
  • 1 can cream of chicken soup or 1 can cream of mushroom soup
  • 1/2 c. real manses
  • 1/2 c. sweet milk
  • 1/4 tsp. salt and pepper
  • 1 c. cracker crumbs
  • 1/2 c. cheese

Directions

    Cook squash, drain, mash and set aside.

    Saute onion and green pepper in oleo.

    Combine all ingredients except cracker crumbs and cheese in a baking dish.

    Mix well.

    Cover casserole with cracker crumbs and cheese.

    Bake at 350° until cheese is melted and brown.
