  • 4 c. yellow squash, sliced
  • 1 c. carrots, sliced
  • 1 onion, chopped
  • 1/3 c. celery, chopped
  • 5 Tbsp. butter
  • 1 c. sour cream
  • 1 3/4 c. stuffing mix

Directions

    Cook carrots and squash together, about 8 minutes.

    Saute celery and onion together.

    Place in layers; sprinkle top layer with stuffing mix.

    Cover and bake 20 minutes at 350°, then uncover and bake 10 minutes more.
