- 3 c. cooked, drained squash
- 2 eggs
- 3/4 c. cracker crumbs
- 1 bell pepper, chopped
- 1 medium onion, chopped
- 1 can cream of mushroom soup
- salt and pepper to taste
Directions

1Cook bell pepper and onion in 1 tablespoon oil until done, but do not brown.

2Beat eggs; add crackers, mushroom soup, squash and then cooked onion and bell pepper. Dot top with butter and cracker crumbs.

3Bake at 350° or 400° until brown on top.
