Ingredients

  • butternut, acorn or zucchini squash
  • red, green or yellow pepper
  • carrots
  • purple onions
  • mushrooms
  • celery
  • 1 lb. sausage
  • 1 box Stove Top stuffing (any flavor)
  • butter

Directions

    Cut squash in half; scoop out the middle.

    Leave enough to make shell firm.
  3. 3
    Cut up scooped out squash in bite size cubes. Cut up any vegetables into cubes.

    Saute in butter until browned and soft.

    Brown sausage and mix with squash and vegetables. Brush squash shells with butter and bake in microwave about 7 minutes.
