Squash Casserole

  • 6 to 8 squash, sliced
  • 1 medium onion, sliced
  • 2 Tbsp. water
  • 4 Tbsp. margarine
  • 2 eggs, slightly beaten
  • 2 Tbsp. milk
  • 1 c. Cheddar cheese, grated
  • 16 crumbled nonsalted crackers

Directions

    Cook squash, onion, water and margarine until tender.

    Add eggs, milk, cheese and crackers; mix well.

    Pour into a casserole dish that has been sprayed with nonstick vegetable spray.

    Bake at 325° until top is slightly browned.
