- 2 lb. yellow squash
- 3 tsp. butter
- 1 c. Ritz cracker crumbs
- 1 c. grated Cheddar cheese
- 1 medium onion, chopped
- 1/2 tsp. salt
- dash of black pepper
- 1/2 c. milk
- 1 egg
Directions

1Cook squash and onion until tender.

2Remove from heat; add salt, pepper and butter.

3Add cracker crumbs, half the grated cheese, milk and egg.

4Stir until well blended.

5Pour into casserole; sprinkle remaining grated cheese over top.

6Bake at 350° for 20 minutes.

7Garnish with parsley.
