- 6 to 8 medium sized yellow squash, sliced
- 1 large onion, chopped
- 1 lemon
- 1 c. Cheddar cheese, grated
- 1 c. bread crumbs
- salt and pepper to taste
Directions

1Combine the squash and onion in a saucepan with a small amount of water and boil until tender.

2Drain and mash.

3Add grated rind and juice of lemon, along with half the cheese, half the bread crumbs, salt and pepper.

4Stir together.

5Pour into 1-quart casserole and top with remaining cheese and bread crumbs.

6Bake at 350° for about 30 minutes or until the top is brown and bubbly.
