Squash Casserole

Ingredients

  • 2 to 3 c. cooked squash (keep 1/2 c. liquid from squash)
  • 2 carrots, diced
  • 1 can cream of chicken soup
  • 1 (8 oz.) sour cream
  • 1 pkg. herb stuffing mix
  • 1 or 2 onions, diced
  • 1 can pimento or 1 small jar
  • 1 stick butter, softened
  • salt and pepper to taste

Directions

    Mix butter and herb stuffing mix together.

    Place half of stuffing mix on bottom of casserole dish.

    Mix all other ingredients together and pour over stuffing mixture.

    Pour other half of stuffing mixture on top.

    Bake at 350° for 30 to 35 minutes.
