- 8 to 10 yellow squash, cooked, drained and smashed
- 1 chopped onion
- 1 chopped bell pepper
- 1 jar pimentos
- 1/2 to 1 chopped jalapeno (optional)
- salt and pepper
- garlic salt
- 2 eggs, slightly beaten
- 1 small pkg. Velveeta cheese, grated
- 1 1/2 c. Pepperidge Farm herb stuffing crumbs
Directions

1Cook onion and bell pepper in small amount of oil until onion is clear, then mix all ingredients together (reserve 1 cup stuffing crumbs and enough cheese for top).

2Pour into casserole dish.

3Put cheese on first and top with crumbs.

4Bake at 350° for 20 to 30 minutes.
