Squash Casserole

Ingredients

  • 8 to 10 yellow squash, cooked, drained and smashed
  • 1 chopped onion
  • 1 chopped bell pepper
  • 1 jar pimentos
  • 1/2 to 1 chopped jalapeno (optional)
  • salt and pepper
  • garlic salt
  • 2 eggs, slightly beaten
  • 1 small pkg. Velveeta cheese, grated
  • 1 1/2 c. Pepperidge Farm herb stuffing crumbs

Directions

    Cook onion and bell pepper in small amount of oil until onion is clear, then mix all ingredients together (reserve 1 cup stuffing crumbs and enough cheese for top).

    Pour into casserole dish.

    Put cheese on first and top with crumbs.

    Bake at 350° for 20 to 30 minutes.
