  • 5 or 6 medium squash, cooked
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 1/2 c. chopped bell pepper
  • 1/2 c. chopped onion
  • 1 medium jar pimento peppers
  • 1 grated carrot
  • 1 stick butter
  • 1 pkg. Pepperidge farm herb seasoned stuffing mix

Directions

    Mix first 7 ingredients together.

    Melt butter; add to crumbs and mix well.

    Arrange in baking dish in layers the squash mixture and crumbs.

    End with crumbs on top.

    Bake at 350° for 40 minutes.
