  • 2 pkg. (3 to 4 c.) squash
  • 1 to 1 1/2 onions
  • 1 stick margarine
  • 1 c. sour cream
  • 1 c. cream of chicken soup
  • 1/2 pkg. stuffing mix or croutons
  • 2 oz. Cheddar cheese
  • 2 eggs
  • 1/4 c. milk
  • 1 c. green pepper (optional)

Directions

    Cook squash with onion until done (add 1 cup green pepper for extra flavor).

    Drain.

    Put 1 stick margarine in squash and mash like potatoes.

    Add sour cream and soup; mix well.

    Add stuffing mix or crumbled croutons.

    Mix.
