- 1 qt. sliced squash (cooked & drained)
- 1/2 c. medium cheddar cheese
- 1/2 c. minced onions
- 1 1/2 c. crushed crackers (ritz)
- 2 eggs, beaten
- salt & pepper
Directions

1Put squash in large casserole dish & mash.

2Add cheese leaving enough to cover later.

3Stir in crackers & minced onions. Add eggs & stir quickly to prevent them from cooking.

4Salt & pepper to taste.

5Cover with rest of cheddar cheese.

6Cook at 350 degrees for 20 minutes.

7Uncover and cook an additional 20 minutes or until slightly brown.
