- 2 lb. squash, cooked and drained
- 1 carrot, grated
- 1 onion, chopped
- 2 Tbsp. pimento, chopped
- 1 can cream of chicken soup
- 1/2 pt. sour cream
- 1 pkg. herb stuffing mix
- 1 stick margarine, melted
Directions

1Cook squash; season lightly with salt and pepper.

2Add carrot, onion, pimento and soup.

3Pour melted margarine over stuffing and mix well.

4Add 1/2 stuffing mix to squash and place in buttered casserole.

5Cover with remaining stuffing.

6Bake at 375° for 25 to 30 minutes.
