- 2 lb. squash, washed and cut in 1/2-inch slices
- 1 medium onion, peeled and sliced
- 2 beaten eggs
- 1/2 stick butter, melted
- 1 c. grated sharp cheese
- 6 saltine crackers
- salt and pepper to taste
Directions

1Place squash and onion in a saucepan.

2Cover in water barely. Cook until tender (about 15 minutes).

3Drain and mash (not too fine).

4In a shallow casserole dish, mix squash mixture with eggs, butter, cheese, salt and pepper.

5Top with a little more grated cheese, crushed crackers and dot with thin pieces of butter.

6Cook in a 350° oven for 30 minutes or until brown and bubbly.
