Squash Casserole

Ingredients

  • 2 lb. yellow squash in 1/4-inch slices
  • 1/2 c. water
  • 1/2 tsp. salt
  • 1 c. chopped onion
  • 1 c. chopped red pepper
  • 1/4 c. melted butter
  • 1 beaten egg
  • 1 c. shredded Cheddar cheese
  • 1 can water chestnuts, sliced and drained
  • 2/3 c. mayonnaise
  • 2 tsp. sugar
  • 1/4 tsp. black pepper

Directions

    Combine squash and water.

    Cover and cook slowly 10 minutes; drain.

    In skillet saute onion and pepper in butter 3 minutes. Combine all ingredients.

    Spoon into casserole dish.

    Bake at 350° for 30 minutes.
