Squash Casserole

Ingredients

  • 1 lb. frozen sliced yellow squash (can use fresh)
  • 1 1/2 c. grated Cheddar cheese
  • 1/4 stick margarine
  • 1 egg
  • 1/4 c. milk
  • 8 crackers, crushed
  • salt and pepper to taste

Directions

    Boil squash until tender; drain and mash.

    Add cheese, butter, egg, milk and crackers.

    Season with salt and pepper.

    Put grated cheese on top.

    Bake in shallow casserole dish at 350° until set and brown (about 45 minutes).
