- 2 c. squash
- 1 large onion
- 1 pkg. Ritz crackers, crumbled
- 1/4 c. melted margarine
- 1 c. grated cheese
- 2 eggs
- 1/2 c. milk
- salt and pepper to taste
Directions

1Cook squash and onion together until tender; drain off liquid and mash.

2Beat together eggs and milk; add to squash.

3Mix cheese, margarine and cracker crumbs.

4Add 1/2 of this to squash mixture; pour into buttered casserole dish.

5Sprinkle remaining crumb mixture on top.

6Bake for 20 to 30 minutes at 400°.

7Serves 6 to 8.
