Squash Casserole

Ingredients

  • 1 1/2 lb. squash or 2 (10 oz.) pkg. frozen squash
  • 1 carrot, grated
  • 2 c. grated cheese
  • 1 medium onion, chopped
  • 3/4 c. sour cream
  • 1/2 stick butter
  • 1 can cream of chicken or cream of mushroom soup
  • 1/2 pkg. seasoned bread crumbs
  • salt and pepper to taste

Directions

    Cook squash until soft enough to mash.

    Add all ingredients except bread crumbs and 1 cup grated cheese.

    Mix 1 cup cheese and bread crumbs together and sprinkle on top.

    Dot with butter.

    Bake for 30 to 40 minutes at 350°.
