Ingredients

  • 1 lb. squash
  • 1 small onion
  • 3 Tbsp. butter
  • 1 c. milk
  • 2 eggs, beaten
  • 1 c. grated cheese
  • 1 c. cracker crumbs
  • salt and pepper to taste

Directions

    Combine first two ingredients. Cook, drain and mash. Add remaining ingredients, reserving 1/2-cup cheese to sprinkle over top. Pour into buttered casserole. Bake at 375° until firm and cheese is brown.
