- 4 medium sized yellow squash (about 1 1/2 lb.), sliced
- 1/2 c. minced onion
- 1/4 c. water
- 1 c. soft whole wheat breadcrumbs (about 3 slices)
- 1/2 c. (2 oz.) shredded extra sharp Cheddar cheese
- 1 egg, lightly beaten
- 1/2 tsp. garlic salt
- 1/8 tsp. red pepper
- paprika
Directions

1Combine squash, onion and water in a 2-quart casserole.

2Cover with casserole lid and microwave at High for 9 to 10 minutes or until squash is tender, stirring after 4 minutes.

3Mash squash mixture with a potato masher.

4Add next 5 ingredients; stir well. Cover with casserole lid and microwave at Medium-high (70% power) for 8 to 10 minutes, stirring after 4 minutes.

5Let stand 5 minutes before serving.

6Sprinkle with paprika.
