Squash Casserole

Ingredients

  • 3 c. yellow or acorn squash
  • 1/2 c. chopped onion
  • 1 c. sour cream
  • 1 can cream of mushroom soup
  • 1 c. grated cheese
  • 1 box Stove Top stuffing (savory herb)

Directions

    Cook squash and onion until tender.

    Drain and mash.

    Add soup and sour cream.

    Prepare Stove Top stuffing with 1 stick of margarine.

    Spread half of the stuffing mix on a greased 9 x 13-inch baking dish.

    Pour squash mixture over stuffing mix, then top with remainder of stuffing mix.

    Bake 30 to 40 minutes at 350° until brown.

    Top with cheese and let melt before serving.
