Squash Casserole

Ingredients

  • 3 to 4 lb. yellow squash, sliced thin
  • 1 1/2 green peppers, chopped
  • 2 large onions, chopped
  • 1 c. rice (uncooked)
  • 4 oz. W.W. Cheddar cheese
  • 2 (10 oz.) cans stewed tomatoes
  • 2 Tbsp. garlic powder
  • 2 Tbsp. parsley
  • salt and pepper to taste

Directions

    Put all ingredients (except cheese) into a large bowl and mix with hands.

    Spray a 9 x 13-inch pan with nonstick spray.

    Empty bowl into pan and cover with foil.

    Bake at 350° for 1 hour. Remove foil and stir.

    Place cheese atop.

    Bake until golden brown and liquid is absorbed.

    Makes 8 large portions.
