- 3 to 4 lb. yellow squash, sliced thin
- 1 1/2 green peppers, chopped
- 2 large onions, chopped
- 1 c. rice (uncooked)
- 4 oz. W.W. Cheddar cheese
- 2 (10 oz.) cans stewed tomatoes
- 2 Tbsp. garlic powder
- 2 Tbsp. parsley
- salt and pepper to taste
Directions

1Put all ingredients (except cheese) into a large bowl and mix with hands.

2Spray a 9 x 13-inch pan with nonstick spray.

3Empty bowl into pan and cover with foil.

4Bake at 350° for 1 hour. Remove foil and stir.

5Place cheese atop.

6Bake until golden brown and liquid is absorbed.

7Makes 8 large portions.
