- 6 to 8 zucchini, sliced
- 2 beefsteak tomatoes, quartered twice
- 1 small purple onion, chopped
- 3 oz. Cheddar cheese (2-inch chunks)
- 3 oz. Monterey Jack cheese (2-inch chunks)
- 1 can Chinese noodles
Directions

1Place 5 pats butter over bottom of deep dish casserole.

2Place sliced zucchini on bottom of dish, then layer tomato chunks, onions and cheese.

3Repeat layers (including butter) to top of dish. Cover and bake at 350° for 45 minutes.

4Uncover and pour Chinese noodles over top.

5Put back in oven, uncovered, and cook an additional 15 minutes at 425°.

6Remove and let stand 15 to 20 minutes before serving.
