  • 2 lb. yellow squash
  • 1 onion, chopped
  • 1 c. grated carrots
  • 1/2 pt. sour cream
  • 1 stick butter or margarine
  • 1 c. herbed stuffing mix

Directions

    Saute onion and squash in a little oil until onion is translucent. Cover and let steam for a few minutes. Mix squash, onion, carrots and sour cream. Melt butter and toss with stuffing. Place the stuffing in a casserole. Bake at 350° for 35 minutes.
