- 8 medium squash
- 4 strips bacon
- 1 medium onion, chopped
- 1/2 bell pepper, chopped
- 1 c. saltine cracker crumbs
- 2 eggs
- butter
- paprika to taste
- grated cheese
Directions

1Preheat oven to 350°.

2Boil squash in salted water in saucepan until tender; drain.

3Fry bacon in skillet; crumble and add with drippings to squash.

4Add onion and bell pepper; mix well. Reserve small amount of cracker crumbs for topping.

5Add remaining crumbs and eggs to squash mixture; mix well.

6Pour into greased 3-quart casserole.

7Top with reserved crumbs.

8Dot with butter; sprinkle paprika and cheese over top.

9Bake in a 350° oven for 30 minutes, or until done.
