Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1/4 c. butter
  • 1 (8 oz.) box stuffing mix
  • 1 c. shredded carrots
  • 1 can creme of chicken soup
  • 1 c. sour cream
  • 1 small or medium sized onion, diced
  • salt and pepper to taste

Directions

    Slice squash into thick chunks and quarter; cook in saltwater just until done.

    Drain well.

    Melt butter and add to stuffing mix.

    Combine soup and sour cream.

    In large bowl, combine squash, carrots, onion and salt and pepper to taste; fold in soup mixture. In a 13 x 9 baking dish, spread a layer of stuffing mix and pour squash mixture over it.

    Sprinkle top with stuffing mix.

    Bake at 350° for 30 to 45 minutes or until completely heated through.

    May be prepared ahead of time and kept in the fridge until baking time.
