Squash Casserole

Ingredients
- 4 c. squash
- 2 medium carrots, grated
- 1 medium onion, chopped
- 1 (2 oz.) jar pimentos
- salt and pepper to taste
- 1 can cream of chicken soup
- 1/2 pt. sour cream
- 1 stick margarine
- 1 pkg. Pepperidge Farm stuffing (herb seasoned)
Directions

1Cook squash, carrots and onions until tender and water cooks out.

2Turn off heat and add soup, pimentos and sour cream and mix. Melt margarine and mix with stuffing.

3Alternate layers of stuffing and squash mixture, starting with stuffing on bottom of casserole.

4Cook at 350° for 30 minutes.
