- 4 medium yellow squash
- 2 Tbsp. butter, melted
- 1 c. Ritz crackers, crumbled
- 1/2 light cream or evaporated milk
- 1 c. shredded Cheddar cheese
- 1/2 c. chopped onion
- 2 chopped, hard-boiled eggs
- 4 oz. sour cream
Directions

1Slice squash and cook with onions in water until soft. Drain.

2Add crumbs, butter, almost all of the cheese and eggs. Season with salt and pepper.

3Add cream and mix in with squash mixture.

4Pour into buttered casserole dish.

5Sprinkle with remaining cheese.

6Bake at 450° until done, about 25 to 30 minutes.
