Squash Casserole

Ingredients

  • 6 small squash (yellow)
  • 1 medium onion, chopped
  • 1 tsp. sugar
  • 1 egg
  • 3/4 c. grated cheese
  • 1 tsp. oregano
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. Pepperidge Farm herb-flavored stuffing mix
  • 2 Tbsp. margarine

Directions

    Wash squash and slice or chop.

    Add onion and sugar and boil in small amount of water until tender.

    Drain well and let cool.

    Stir in slightly beaten egg, cheese, salt, pepper and oregano.

    Pour into buttered baking dish.

    Top with stuffing mix and dot with margarine.

    Bake at 350° for 30 minutes.
