  • 2 lb. zucchini or yellow squash
  • 1/4 c. chopped onions
  • 1 can cream chicken soup
  • 1 c. sour cream
  • 1 c. shredded carrots
  • 1 (8 oz.) pkg. herb stuffing mix
  • 1/2 c. oleo, melted

Directions

    Cook sliced squash and chopped onion in boiling salted water for 5 minutes. Drain and combine with chicken soup, sour cream and shredded carrots. Combine stuffing mix and oleo. Spread 1/2 of stuffing mix over 12 x 7 1/2 x 2 casserole. Spoon vegetable mix over stuffing. Sprinkle remaining stuffing mix over vegetables. Bake in 350° oven for 25 to 30 minutes or until bubbly.
