Squash Casserole

Ingredients

  • 1 1/2 lb. yellow squash, sliced and parboiled
  • 1 jar pimento, chopped
  • 1 small onion, grated
  • 1 c. (or more) diced celery
  • 1 c. sour cream
  • 1 can cream of chicken soup
  • 2 carrots, grated
  • 1 pkg. Pepperidge Farm cornbread stuffing
  • 1 stick oleo, melted

Directions

    Mix stuffing and melted oleo.

    Use about 2/3 of it to line the bottom of a casserole.

    Mix soup, sour cream, grated onion and carrots.

    Stir in remaining vegetables and place over stuffing layer.

    Sprinkle remaining stuffing mixture on top.

    Bake 50 to 60 minutes at 350°.

    Serves 12 to 15.
