Squash Casserole

Ingredients

  • 8 to 10 medium yellow squash
  • 1/4 c. bell pepper, chopped fine
  • 3 green/spring onions, chopped (green stems also)
  • 2 eggs
  • 12 saltine crackers, crushed
  • dash of Tabasco sauce
  • 1 1/2 c. grated Cheddar cheese

Directions

    Cook squash until tender; saute onions and bell pepper in small amount of margarine.

    Mix all ingredients, reserving 1/2 of cheese for top.

    Bake at 350° for 30 minutes.
