  • 1 pkg. Mexican cornbread mix
  • 1 medium onion, chopped
  • 1 stick oleo
  • 6 medium squash, cooked
  • 1 can cream of chicken soup
  • 2 eggs, slightly beaten
  • cheese (optional)

Directions

    Bake cornbread and crumble into mixing bowl. Saute onion in margarine. Add onion and remaining ingredients to crumbled cornbread. Mix well; pour into buttered or oiled casserole dish. Bake at 350° until set and browned around edges. Top with cheese after taking out of oven, if desired.
