- 1 pkg. Mexican cornbread mix
- 1 medium onion, chopped
- 1 stick oleo
- 6 medium squash, cooked
- 1 can cream of chicken soup
- 2 eggs, slightly beaten
- cheese (optional)
Directions

1Bake cornbread and crumble into mixing bowl. Saute onion in margarine. Add onion and remaining ingredients to crumbled cornbread. Mix well; pour into buttered or oiled casserole dish. Bake at 350° until set and browned around edges. Top with cheese after taking out of oven, if desired.
