Squash Casserole

Ingredients

  • 6 c. sliced yellow squash
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. mayonnaise
  • 1/2 c. butter
  • 1 egg
  • 2 Tbsp. butter
  • 3 Tbsp. sugar
  • salt and pepper to taste
  • 1/2 c. Pepperidge Farm herb seasoned stuffing
  • 1/2 c. pecans, chopped

Directions

    Cook squash in salted water until tender.

    Drain well and mix with mayonnaise, butter, egg and sugar.

    Salt and pepper to taste. Pour in lightly greased 2-quart casserole. Crush stuffing and brown in butter.

    Add pecans and cover top of casserole.

    Bake at 400° for 20 minutes.

    Serves 8.
