Squash Chili Verde

  • 1 Tbsp. cooking oil
  • 4 to 6 medium size yellow squash
  • 1 small onion, chopped
  • 1 green chili pepper (mild or hot)
  • 1/2 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 c. grated American cheese (not Velveeta)

Directions

    Saute onion and chopped chili pepper in oil until tender.

    Add squash, milk, salt and black pepper.

    Cover and simmer for 15 minutes.

    Remove from burner; top with grated cheese and cover until cheese melts.

    Serve hot.
