Squash Chili Verde

- 1 Tbsp. cooking oil
- 4 to 6 medium size yellow squash
- 1 small onion, chopped
- 1 green chili pepper (mild or hot)
- 1/2 c. milk
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 c. grated American cheese (not Velveeta)
Directions

1Saute onion and chopped chili pepper in oil until tender.

2Add squash, milk, salt and black pepper.

3Cover and simmer for 15 minutes.

4Remove from burner; top with grated cheese and cover until cheese melts.

5Serve hot.
