Squash Croquettes

  • 2 lb. squash
  • 2 c. very fine bread crumbs
  • 1 c. very fine cornbread crumbs
  • 1 medium onion
  • 1/2 stick butter
  • 2 eggs
  • salt and pepper
  • sugar

Directions

    Cook squash in small amount of water until tender.

    Drain well and mash fine.

    Grate onion and saute in butter until done.

    Mix all ingredients; chill.

    Make into croquettes and roll in bread crumbs.

    Fry in deep fat.
