Squash Croquettes

Ingredients

  • 5 lb. squash
  • 1 qt. bread crumbs
  • 4 1/2 oz. onions
  • 3 large eggs
  • 2 oz. margarine
  • salt and pepper to taste
  • Accent to taste
  • 1 pt. corn bread crumbs

Directions

    Steam squash until well done.

    Mash fine. Chop onion fine. Saute in margarine until tender.

    Mix all ingredients together. Chill until very cold. Form in oblong croquettes and roll in soft bread crumbs. Cook in deep fat until brown.
