Squash Crouquettes

Ingredients

  • 4 or 5 yellow squash, cut up
  • 1 small onion, cut up
  • salt to taste
  • 1 egg, beaten
  • 2 Tbsp. butter
  • 1/4 c. grated cheese
  • 1 c. cracker crumbs

Directions

    Cook squash and onion in small amount of salted water.

    Drain and mash.

    Add egg, butter, cheese and 1/2 cup cracker crumbs. Mix well.

    Shape into balls and roll in remaining crumbs.

    Fry in deep fat until golden brown.
