Ingredients

  • 1 to 2 lb. zucchini or yellow squash
  • 1 stick margarine
  • 1/2 pkg. Pepperidge Farm cornbread stuffing
  • 1 can cream of chicken soup
  • 1 (8 oz.) carton sour cream
  • 1 can water chestnuts, drained
  • 1 large onion, chopped fine
  • 1 (4 oz.) jar chopped pimento (optional)

    boil until tender; drain. Saute stuffing in margarine; set aside.

    Combine chicken soup, sour cream, water chestnuts, onion, pimento and squash. Using an 8-inch square Pyrex,
