- 3 lb. yellow or zucchini squash
- 1 can cream of chicken soup
- 1 can water chestnuts
- 4 oz. jar pimientos
- 2 c. grated cheese
- 2 medium onions, chopped
- 8 oz. sour cream
- 1 stick margarine
- 1 pkg. corn bread stuffing mix
Directions

1Slice squash.

2Drain and slice water chestnuts.

3Simmer squash and onions until tender.

4Stir together the soup, sour cream, chestnuts and pimientos.

5Drain squash and fold into soup mixture. Melt margarine and drizzle over stuffing mix.

6Place half of stuffing in bottom of 9 x 13-inch dish.

7Add squash mixture and top with remaining stuffing.

8Bake at 350° for 30 minutes.

9Add cheese during last 10 minutes.
