Ingredients

  • 3 lb. yellow or zucchini squash
  • 1 can cream of chicken soup
  • 1 can water chestnuts
  • 4 oz. jar pimientos
  • 2 c. grated cheese
  • 2 medium onions, chopped
  • 8 oz. sour cream
  • 1 stick margarine
  • 1 pkg. corn bread stuffing mix

Directions

    Slice squash.

    Drain and slice water chestnuts.
  3. 3
    Simmer squash and onions until tender.

    Stir together the soup, sour cream, chestnuts and pimientos.

    Drain squash and fold into soup mixture. Melt margarine and drizzle over stuffing mix.

    Place half of stuffing in bottom of 9 x 13-inch dish.

    Add squash mixture and top with remaining stuffing.

    Bake at 350° for 30 minutes.

    Add cheese during last 10 minutes.
