- 1 12 lbs squash
- 1 small onion, chopped
- 15 Ritz crackers (more or less to taste)
- 13 cup extra virgin olive oil
- 2 large egg whites
- 34 cup cheese, shredded, low fat colby jack
- salt & pepper
Directions

1Peel squash, remove seeds, cut into large chunks.

2Boil squash until tender (5-7 mins).

3Drain; mash squash chunks thoroughly; add oil, egg, onion, crumbled crackers, salt & pepper.

4Put mix in greased casserole dish.

5Top with cheese.

6Bake at 350 for about 25 minutes (until the edges start to bubble).
